Southwest Stuffed Acorn Squash

The recipe I will be sharing today is a Southwest Stuffed and Roasted Acorn Squash dish.

Acorn squash is a great Starchy vegetable for the winter months, though it’s available any time of the year.

It is an easy vegetable to prepare for a variety of dishes .

Acorn Squash also is great for antioxidants that help radical damage to the body.

Acorn squash has high levels of vitamin Cvitamin A, thiamin, pantothenic acid, and other B-family vitamins.

Picking out Acorn Squash

Before you can cook the perfect tasting Acorn Squash you must pick one that is ready!

The key is choosing one that has a smooth surface with no cracks or soft spots.

You want to make sure the rind has a dull surface to it , a shiny surface mean it was picked too early!

Choosing an Acorn Squash with a shiny surface, means you will be missing out on the full sweetness of the squash.

Make sure the majority of the surface is green, selecting one with too much orange will result in a dry and stringing squash.

  • Acorn Squash ( 1, 22 oz squash)
  • Ground 97% turkey (10 oz)
  • Salt and pepper (to taste)
  • Chili powder (1 table spoon)
  • Garlic powder ( 1 teaspoon)
  • Fresh Onion ( .25 of medium onion)
  • Fresh sweet baby peppers ( 3 peppers)
  • Franks red hot ( 2 tablespoons)
  • your favorite salsa ( 2 tablespoons)
  • Sharp Cheddar Cheese ( 1.4 oz)
  • Unsalted butter ( 1 tablespoon)
  • Green cabbage( 2 oz)
  • Non fat cooking spray

Preparing Acorn Squash

Preheat the oven to 350

Wash the outside of the Acorn Squash with water and cut down the middle to make two halves.

Scoop out the middle seeds and stringing pieces , this will look and be similar to cleaning a pumpkin.

Divide 1 table spoon of butter and place each in scooped out areas of squash

Spray the outsides and insides of the squash with non fat cooking spray and place in oven for 30 min.

Preparing the Ground Turkey

Heat a medium sauce pan up and place raw turkey in pan.

Drop all dry seasonings, vegetables into pan and brown turkey off.

When turkey has browned drop hot sauce and salsa into pan and cook for another 2 to 3 min while stirring occasionally.

Stuffing the Acorn Squash

When the squash is tender pull from oven , should take about 30 min in oven at 350 .

Let the squash cool down slightly for about 5 min.

Stuff the cooked turkey into the squash halves and top with cheddar.

Place back in the oven for another 10 mins or until cheese is melted completely.

Pull from oven and place on serving dish.

That is all there is to this lean, hearty and healthy dish!
