Barbacoa Beef (slow cooked)

This Recipe for Barbacoa Beef was inspired by my all time favorite place to eat when I’m on the go, CHIPOTLE!

When I cant make it to Chioptle I do the next best thing, I make it myself!

This beef is best served over a bed of cilantro lime rice.

This dish cooks all day in the crock pot and is ready to serve after a long days work.

I have said it before and I will say it again!

Please invest in a crock pot and rice cooker, It makes meal prepping easy.

By the time you’re ready to eat this Barbacoa beef, it will have cooked for 8 hrs and be falling apart with savory flavor.


5 cloves garlic
1/2 medium onion
1 lime, juice
2-4 tbsp chiptoles in adobo sauce
(to taste)
1 tbsp ground cumin
1 tbsp ground oregano
1/2 tsp ground cloves
1 cup water
3 lbs beef eye of round or bottom round roast, all fat trimmed
2 1/2 teaspoons kosher salt
black pepper
1 tsp oil
3 bay leaves

The Cooking Process

Place garlic, onion, lime juice, cumin, oregano, chipotles, cloves and water in a blender and puree until smooth.

Trim all the fat off meat, cut into 3-inch pieces. Season with 2 teaspoons salt and black pepper.

Heat a medium saute pan to high, add oil and brown the meat, in batches on all side, about 5 minutes.

Pace browned meat in large crock pot and Add the sauce from the blender and bay leaves, cover and cook on low until the meat is tender and easily shreds with 2 forks, about 8 hours.

Rice- Cook a day before if you have time( follow your normal cooking instruction on your rice cooker)

When rice is cooked fold in lime juice , salt , and fresh cilantro to taste.

Serve shredded Beef over a bed of the rice.

You can use the meat droppings for additional flavor to spoon over the dish.

  • Sour cream
  • Corn
  • Broccoli
  • All the above at one time!
